Ginger Sticky Chicken (from the Harmony Elementary School cookbook, pg 60, submitted by Avery Willman)

Ingredients:

4-5 skinless, boneless chicken breasts
1/4 cup soy sauce
1/4 cup vinegar
1 tsp. ginger
1 1/2 tsp. garlic powder
2 tsp. sugar

Directions: Place chicken in a heavy skillet; combine the above ingredients and pour over the chicken. Cover and cook on medium heat for 1 to 1 1/2 hours, turning the chicken ever so often

My variants and review: I used balsamic vinegar, since I had that and malt in the house, and it was really delicious. I'd totally recommend using balsamic or rice wine vinegar for extra kick. The ginger (powdered) I had in the house wasn't very fresh, and I think when I make this again I'd add some fresh raw ginger for extra flavor. I think next time I'd also consider trading at least some of the garlic powder out for fresh minced garlic. I think subbing honey for the sugar would also be delicious. I served this over a cup of white rice (again, what I had in the house) with a side of asparagus, and Smog and I both devoured our portions and were comfortably full, so serves two. Super easy, really pretty healthy (no fats or oils needed at all!) and very delicious. This recipe is a keeper!

Went up to Tulsa for lunchings and hanging out with [livejournal.com profile] spacezombie. I had the most backhanded fortune ever, made even worse when read in context with his, which he is going to post, too. It was :

Enjoy life! It is better to be happy than wise.

I'm paraphrasing, 'cause I lost it at the park, (FOUND IT!) but it totally came across as reading like "you can either have happiness or wisdom, and you will get happiness", which basically made me feel like my fortune cookie was calling me dumb. I laughed hard. I laughed a lot today. I laughed until my sides hurt, which I really needed. Thankfully, the rain held off so we could go out and get some sunshine and exercise walking around the Tulsa Rose Gardens and the Linnea Teaching Gardens and the Anne Hathaway Herb Garden. Some of my favorite places in Tulsa, for certain. I cam home with my pockets full of herb pinchings, 'cause I kept breaking off teeny bits to smell and taste.

When [livejournal.com profile] spacezombie headed for class, I ran on up to Broken Arrow to drop something off for [livejournal.com profile] aoifemacewen, by which time it was raining cats and dogs. I chatted with her for a bit while looking up the name of Desiwok, a place that [livejournal.com profile] tapestry01 had tried and recommended. I couldn't find the one in Broken Arrow, but I did find one in Tulsa, and I had some incredibly delicious Chicken Korma for dinner. Mmmm....

Made it safely home in the rain.
